About the course

To ensure that you have safe working practices in your business, register for a one day CIEH (Chartered Institute of Environmental Health) Level 2 Award which covers:
  • Legislation
  • Good hygiene practice in catering
  • Temperature control
  • Chilling, Cooking, Cleaning, Cross-contamination
Businesses must be able to show what they do to make their food safe to eat and have their food safety management procedures written down. Since 1st January 2006, regulations set out by the European council 29/04/04 (Regulation 852/2004) have required food businesses to implement and maintain food safety management procedures based upon Hazard Analysis Critical Control Points (HACCP) principles.

This course will provide your business with all the tools you need in order to set up a food safety management system and maintain high levels of food hygiene within your establishment.

The one day course will demonstrate the main risks associated with the preparation of food through the use of a variety of teaching methods. The course makes full use of Aston University’s microbiology equipment to provide real demonstrations of certain problems associated with food preparation. This allows for a much more interactive approach to learning and will give you and your staff a much more dynamic experience than a simple lecture and exam. At the end of the course you will be provided with a multiple choice exam and upon passing the exam you will be sent a CIEH Level 2 Award for Food Safety in Catering certificate.
